Sustainable Atlantic Salmon is on the Menu at Modern Market
There’s a new protein at Modern Market: Sustainable Atlantic salmon. When we came across Verlasso, a leader in sustainable salmon, the timing couldn't have been more perfect to add this protein to a couple areas on our menu.
The salmon are raised in the pollutant-free waters of Chilean Patagonia where there is very little industrial development. Not to mention, the fish have a lot of room to grow, with fewer than three salmon per ton of water.
Hormone and antibiotic-free, the salmon grow to harvest size over a period of approximately two years. Their beautiful orange color comes from natural feed components similar to what salmon eat in the wild. Additionally, Verlasso never uses preventative antibiotics. Their salmon is antibiotic-free at harvest and only treated with antibiotics when they’re sick, never routinely.
Our new, sustainably-raised Atlantic salmon is also an excellent source of protein and omega-3s. There's nothing fishy about that! (Sea what we did there?)
Seven years ago, Verlasso was the first ocean-raised salmon to be recognized as a good alternative by the Monterey Bay Aquarium Seafood Watch program, a program that helps consumers make environmentally-friendly seafood choices. Verlasso’s ethical business practices extend to processing and delivery, and we love that about them.
You can catch this new protein in our Curry Salmon Bowl featuring warm heirloom rice, braised kale, coconut sweet potato curry, toasted coconut and green onion. Or, order the Sustainable Salmon Homestyle Plate served with chimichurri, lemon and two sides of your choice.
